Mango Chutney May 11, 2009

Mango chutney is a great condiment great with grilled fish or meat. This recipe is for 2 1/2 pounds of chutney.

2 1/2 lbs ripe mango diced

6 oz diced onion

5 oz raisins,  I like to mince the raisins

4 oz brown sugar

1 oz walnuts, chopped

1/2 oz ginger, minced

1/2 to 1 oz jalapeno, minced depends on how much spice you like.

2 oz cider vinegar

2 garlic cloves, minced

1 lemon, zest grated, juiced

1/2 teaspoon grnd mace

1/2 teaspoon grnd cloves

  1. Toast your walnuts for added flavor, not necessary but but adds great flavor element. Add after you have cooked the rest of ingredients
  2. Combine ingredients in a large sauce pan and simmer until the mango is soft, about 10 minutes.
  3. Strain solids from liquids and reduce liquid to a syrup.
  4. Combine solids with liquid, folding walnuts in last. Cool before serving.
